Mushroom Swiss Melt

Pint of Mushrooms
2 tbsp real butter
 Swiss Cheese
1 head of broccoli
5 slices of bread (I prefer to use bread made with 4 or 5 ingredients.  Water, flour, oil, salt and yeast.)

Steam broccoli until it is soft enough to mash with a fork.  Sautee mushrooms in half of the butter.  Once the mushrooms and broccoli are finished cooking, mix the broccoli in with the mushrooms so they absorb the last bit of remaining butter.  Remove broccoli and mushrooms from the pan.  Melt remaining butter in the pan and lighly grill bread slices.  Once the bottom is grilled, flip the bread over and top with swiss cheese.  Allow the cheese to slightly melt while the second side of the bread becomes golden and crispy.  Serve together.  I enjoy topping the bread with the mushrooms and broccoli.  It reminded me of warm fresh pizza.  Serves 2.
